Recipe: MickGriddle

Though it’s been many years since we’ve frequented the golden arches, it used to be a must on any visit to the Orlando airport! Not eating gluten really makes it challenging to eat there, but I still think about one of my very favorite breakfast treats – all the delights of a cheesy egg sammy sandwiched between two pancakes with little bites of maple goodness inside. I decided to make my own spin on that breakfast delicacy and add a little pixie dust – the MickGriddle!

Ingredients

  • 1/2 cup maple syrup

  • 8 eggs

  • 1/4 cup milk of choice, unsweetened

  • Your favorite pancake mix + needed ingredients – I love Pamela’s for gluten free!

  • 4 slices Bacon

  • 4 slices of American cheese

Begin by making your syrup crystals:

Place a sheet pan lined with parchment paper in your freezer. Bring 1/2 cup of maple syrup to a boil over medium heat. Allow to simmer until it thickens, about 10 minutes. Keep a close eye on it so it doesn’t burn. Grab your chilled sheet pan and pour the thickened syrup on it, spreading with a spatula so it covers the pan in a thin layer. Pop it back into the freezer.

Next, cook your bacon and eggs:

My favorite method of cooking bacon is in the oven, and it works well with the process for the eggs! Preheat your oven to 375. Place your bacon strips on a sheet pan and place in the oven. Whisk your eggs and milk until mixed. Line a 9x13 pan with parchment paper and pour your whisked eggs into it. Carefully place your pan with eggs into the oven as well. Bake until eggs are cooked through and the center is no longer jiggly – about 20 minutes. Keep an eye on the bacon!

Mix up your pancakes:

Make up your favorite pancake mix, according to the instructions. I found I needed a double batch to have enough batter for the sandwiches. Remove your syrup from the oven and carefully break into pieces. It gets sticky again quickly so it’s best if you’re ready to make the pancake magic happen quickly! Place a skillet over medium heat and grab your Mickey pancake mold. Spray the pan and the mold with cooking spray before placing the mold in the pan. Spread a thin layer of pancake batter in the mold, just enough to cover the surface area, and sprinkle your pieces of syrup crystals across the top. Cover with another thin layer of pancake batter, just enough to cover the crystals. Allow to cook until base of pancake is set in the mold. Remove the mold and carefully flip your pancake. Allow pancake to cook through. Remove from heat and repeat!

MickGriddle, assemble!

Cut your eggs into squares. Place one Mickey pancake on your plate. Top with egg, American cheese and bacon. Place a second Mickey pancake on top to create your sandwich, and enjoy!
