Recipe: Thin Mint Cookie Donuts from Everglazed Donuts & Cold Brew

Here are some things in life I love: donuts, empowering girls and young women in business, chocolate and mint together. So when I saw the Disney Food Blog post about the latest Disney donut that combines all of these things, I knew I had to recreate it at home. I whipped up a quick little recipe for the Thin Mint Cookie Donut you can currently find at Everglazed Donuts & Cold Brew at Disney Springs.

Ingredients

  • Your favorite donut with chocolate icing

  • Mini Chocolate chips

  • White cookie writing icing

  • 1-2 drops green food coloring

  • Chocolate icing

    • 1/2 cup softened butter

    • 1/4 cup cocoa powder sifted

    • 2 1/2 cups powdered sugar

    • 1/2 teaspoon vanilla

    • 2-3 tablespoons milk

  • 1 tsp Peppermint extract

  • Thin Mint cookies (find from your nearest Girl Scout or use Goodie Girl if you need gluten free)

I kept this one simple and delicious. I started with my favorite local chocolate-iced donut. If you live near Madison, WI, try Level 5 Donuts immediately. Best gluten free donuts I’ve ever had. I popped it in the microwave for 15 seconds to soften the icing and then dunked it onto a plate of mini chocolate chips to cover the donut. For the chocolate icing, whipped together the butter and cocoa in a bowl until smooth. Add in the powdered sugar and vanilla. Add milk slowly until it reaches the desired consistency. Add in 1 tsp peppermint extract. Pipe the mint chocolate icing in the center of your chocolate-chip-covered donut. Place your Thin Mint on top. Mix green food coloring and writing icing until it reaches desired color and drizzle over the top. Count your lucky stars and enjoy!
